I’ve never had croissants. Not even back when I was only a vegetarian. (I’m from a small town in northern Sweden, they didn’t have that fancy stuff there back when I was growing up). Anyhow, I always wanted to try some. So I thought I could cheat a little and use store-bought puff pastry :)
These are quite small as I’ve used 10 x 10 cm puff pastry squares cut in half along the diagonal.

Ingredients
- 5 vegan puff pastry sheets (squares)
- Vegan chocolate nut cream
- Maple syrup & water
Instructions
- Cut each sheet of puff pastry along the diagonal in half, for a triangle shape
- At the broadest end – place a tiny amount of chocolate nut cream
- Roll into a croissant and fold the edges inward
- Repeat using the remaining puff pastry
- Blend a teaspoons or such of maple syrupy with water, brush each croissant
- Bake in a preheated oven set to 225 C, for about 10-15 minutes until the croissants have risen and are deliciously golden brown
