I’ve discovered coconut nectar sugar and I’m exploring it’s vast array of possibilities. One of the things coconut sugar is perfect for is pie. My favourite apple pie is now processed sugar-free and it tastes 100 times better with coconut nectar sugar. Even the most sugar-addicted person won’t even notice (I tested it ;)).
If you want to make this pie, use the recipe from my cookbook for the crumble pie dough and do the following:
- Replace the sugar with coconut sugar in the same amount.
- Don’t cook the apples, let them soak in a few tablespoons of coconut nectar sugar. 4 tsp Cardamom, 1 tsp cinnamon and a pinch of clove and Himalayan pink salt.
- Replace the cashew nuts in the recipe with walnuts.
