Roasted Red Pepper and Aubergine Spread

This is a perfect match to “The Brit” which you can find over here if you are making an afternoon tea set-up and event. A creamy and flavorful sandwich filling wrapped up in a Swedish flatbread (works well with ordinary wraps or the classic bread as well).


  • 1 pc roasted aubergine
  • 2 pcs roasted red bell peppers
  • 0,5 dl sunflower seeds or walnuts, raw
  • 5 tbsp fresh oregano, finely chopped
  • 1 tbsp olive oil
  • 1 tsp lemon juice
  • 12 pcs large green olives, pitted
  • salt and black pepper to taste


  1. Roast the vegetables and let them cool down prior to creating the filling mixture.
  2. Add all ingredients except the olive oil and lemon juice to a jar.
  3. Mix until smooth with a hand blender.
  4. Add olive oil and lemon juice and mix thoroughly.
  5. Taste with salt and pepper.
  6. Let stand and set in the fridge, preferably overnight.
