Coffee, cacao and cashew nut energy balls

First of all, sorry for the bad photo. However I just had to snap this the other day when I was making these to have as a pre-workout snack in my handbag. (I’ll exchange the photo later for something more inspiring).

I used to do these all the time before. And I just recently thought about making these again. These are the perfect combination of chocolate and coffee. The perfect pre-workout – or post-lunch “pick-me-upper”.

They are very simple to make and quite addictive. (For me who is trying to cut out coffee that is…)

Yields: approx. 20 pcs

  • 4 dl cashew nuts
  • 20 pcs fresh dates
  • 3 tbsp ground and roasted organic coffee
  • 3 tbsp raw cacao powder
  • 2 tsp cold pressed coconut oil
  • A pinch of Himalayan pink salt
  • Add all ingredients (nut first, then dates) to a food processor, and process until there is a sticky dough. Make small or large balls, add them to a plastic container and pop them in the fridge.
